After a Pushing Daisies marathon the other day, I had the familiar urge to make a pie. Wanting that homecooked feel but also wanting to branch out from traditional apple pie, I chose to make a Pear Pie. I used this recipe by PMKLINGBEIL and altered it a bit:
1 9-inch unbaked pie crust
3 pears – peeled, cored, and sliced very thin
1 cup white sugar
2 tbs (approx) light brown sugar
6 tbs butter (unsalted)
1/4 cup all-purpose flour
1 tbs vanilla extract
2 eggs
Shake of cinnamon in the custard, and a few shakes on top just before baking- Preheat the oven to 350 degrees
- Press the pie crust in to a 9-in pie pan & flute the edges. Place the pear slices around the pan, thinner ones on top.
- Beat the butter and both kinds of sugar together in a medium bowl until smooth, then beat in the eggs one at a time until light and fluffy. Stir in flour, cinnamon and vanilla. Pour this mixture over the top of the pears.
- Bake for 40-45 min, until pears are soft and custard is set in the center. It will be browned on top and easy to tell when it’s done. Cool completely and enjoy!
I used a pre-made Pillsbury pie crust in order to make the pie more quickly after dinner (I still haven’t mastered the art of quickly making a pie crust), and it turned out great! We ate until we were literally couldn’t eat another bite for fear of bursting. It’s homey, yet fresh, and extremely satisfying. I highly recommend it with a dollop of vanilla bean ice cream!
